Maley Jorasses Classicum
A cider born in the middle of Valle D’aosta (Italy).
From the top of the Grandes Jorasses in the same mountain chain of Monte Bianco you can easily see both the Valle of Chamonix and the Seissogne orchard.
In this village at 1000 m of altitude the Bétemps family grow monumental apple trees, seculars and of an absolute beauty. From these trees the typical valdostana apple Raventze is born.
These apples give life to a classic method cider, re-fermented in bottle: the Jorasses Classicum.
Maley Jorasses Classicum is a “blanc de blanc” cider.
After obtaining a still cider a tirage, élévage e dégorgement is made to arrive to an extra-brut cider result which can maintain the verticality that the raventze apple has. The élévage before the dégorgement is of around 6 months.
