The production method is simple; when the apples are ripe they are harvested and pressed, then natural yeasts are added and the slow fermentation at a controlled temperature is expected, which releases all the rich flavors of the fruit.
Inspired by the aromatic ciders of northern France, Mac Ivor Traditional Dry is a traditional dry cider produced from an elegant blend of over ten different varieties of apples. The crunchy and tasty Armagh Bramley apples are used to balance the flavors of traditional table apples and sweet and sour cider apples, giving it a deep and dry style.

Stonewell Dry is a typical cider that draws on the sweet and sour tannic flavor typical of the Dabinett and Michelin apple varieties grown in the Laois and Waterford orchards.
Fragrant, rippling with a delicate astringency, softened by the freshness of the juice of table apples used to sweeten and complete the cider.
If your palate prefers dry, this cider is the one for you.
The varieties of Michelin and Dabinett apples are delivered to us in mid-October and are subjected to rigorous washing and careful control to ensure a high quality fresh juice.
We use a selected champagne yeast to ferment this juice in order to promote the best characteristics of the taste that will stand out during the fermentation process.
APPEARANCE – Clear, clear, amber.
AROMA – ripe apple with hints of raspberry and honey
TASTE – dry but with a hint of honey on the palate. A slightly astringent finish with floral notes.
5.5% ABV

Mór Cider is a brand new offering from Longueville House, a family run business run by William O’Callghan of Cork, famous for creating the only Irish apple brandy.

Mór is a slow-fermenting cider produced with Michelin and Dabinett cider apples, further refined for 6 months in their prized apple Brandy barrels.

Why Mór? In Gaelic / Irish, the word Mór is often used to describe something big, important or old.

Longueville House Cider Mór Cider was launched only recently, but has already collected gold in the Craft Cider Cup Dublin 2018 at the Alltech Commonwealth Cup

ASPECT – pale amber, slightly shaded with an orange hue and a short white head.

AROMA – The nose has herbaceous notes, a slight acetic note, hints of beeswax, notes of grapefruit, red apples and apples still in fermentation.

TASTE – Slightly sweet with low acidity and little acetic. Medium on the palate with medicinal and herbaceous notes, a hint of bitterness, vanilla, slightly astringent, red orange and grapefruit peel. It finishes dry, fruity and spicy at the same time with herbaceous notes, red apples and a persistent astringent taste.

ABV 8.0%
